Abstract

This work, through an approach to Brazilian history marked by the enslavement of Africans and the plundering of their knowledge, proposes to analyze the food that comprises Candomblé cuisine as part of Brazil's cultural heritage. This study analyzes the historical erasure of black culture in Brazil, focusing on the food of the Candomblé saints. Based on a review of recognized bibliographic sources, it investigates productions that articulate food, rituality, and identity. Grounded in a countercolonial perspective, it highlights the centrality of orality and experience in the terreiros as forms of resistance and collective memory. It concludes that saint food is a structuring element of Brazilian cuisine and should be recognized as part of Afro-Brazilian cultural heritage, an expression of identity and resistance, symbolized in ebó. Saint food, rich in meaning, survived oppression through oral tradition and religious practice, and is essential to national culture.
