Analysis of memories built in bachelor's degrees in Gastronomy on brazilian kitchen

Abstract

Memory, education and gastronomy are themes that are interconnected between the knowledge spaces of our society. From school to the kitchen, the themes are like spices mixing and provoking different flavors in our culture. The present research sought to understand which memories of Brazilian cuisines are being built in the disciplines of Brazilian cuisine in the Baccalaureate courses in Gastronomy of Federal Public Universities, based on the discussion about memory and identity, the selection of what is considered representative of these cultural identities. Brazilians related to food, bringing a reflection on the preparations presented to the students. Methods of bibliographic review on the subject were used, as well as semi-structured interviews with professors of subjects related to Brazilian cuisines. We understand that, in general, the current approach is linked to tourist training and not Brazilian cuisines, linked to collective memories.
