Abstract

This article analyzed the notion of intangible cultural heritage within the framework of United Nations Educational, Scientific and Cultural Organization (UNESCO) 2003, convention for its safeguarding, focusing on Portuguese religious communities that maintain traditional culinary practices. The study aimed to understand whether Portuguese confectionery could be considered intangible cultural heritage as defined by UNESCO. To this end, it sought to identify, through interviews with nuns from seven convents in Portugal, traces of intergenerational transmission, the preservation of cultural memory, and the construction of group identity around traditional culinary knowledge, the pastry confectionery.
