The Mères cuisine: a brief study on the importance of Lyon's female chefs

Abstract

The term ‘Mères Lyonnaises’, or ‘mothers of Lyon’, refers to a long line of female Chefs that began in the mid-1700s, and brought the gastronomic spotlight to Lyon, France's undisputed gastronomic capital. Its influence and impact helped define and shape classic French cuisine in modern times. This article aims to conduct a study on the Female Chefs of Lyon, analyzing his achievements, achievements and representativeness in the history of French cuisine. To this end, a literature review was carried out through books and articles, as well as articles on blogs and websites, mostly in French and English, that were about the proposed theme, making us understand why they are cited as culinary references in various texts of the twentieth century and regarded as an emblem of Lyon tourism.

Pós-graduanda (Lato Sensu) História Social e Contemporânea - (FUNIP); Tecnóloga em Gastronomia - Gestão e Operação - (UNIVERSO/Recife). Atualmente está como monitora de Sociologia no Projeto de Extensão Portal UFPE e atua como pesquisadora autônoma das temáticas Feminismo e Gastronomia; Relações de gênero e trabalho em cozinhas. Possui interesse em desenvolver pesquisas nas temáticas: Gênero e Alimentação/Gastronomia; Sociologia do Trabalho; Feminismos e Sexualidades.
